We love chickpeas as they are such a versatile item. In Lebanese dishes chickpeas are a staple item – from the infamous hummus to traditional Fatteh. For this meal we are making a quick and easy Mediterranean Chickpea Salad Recipe.
This Mediterranean chickpea salad recipe just has it all. Punchy flavor, bright colors, loads of nutrients, and enough fiber and protein to keep you fueled for hours. The feta cheese crumbles also give it this extra taste that a lot of Mediterranean dishes feature.
The recipe is best when you soak and boil the chickpeas instead of using canned chickpeas. Also, the more color you add with vegetables and fresh herbs the better. Tip: just create this salad to your hearts desire!
Mediterranean Chickpea Salad
Ingredients
- 2.5 Cans of Chickpeas (best if you overnight soak and boil chickpeas)
- 1 Cup Cooked Tri-Color Quinoa
- 4 Cucumbers
- 1/2 Medium Red Onion
- 2 Large Tomatoes
- Salad Dressing of Choice
Instructions
- Add your cooked (or canned) chickpeas to a large serving bowl
- Add your cooked quinoa to that same large serving bowl
- Wash and chop all your vegetables (cucumbers, tomatoes, and onion)
- Combined chopped vegetables with the chickpeas in the large serving boil
- Add crumbled feta cheese
- Top with your favorite salad dressing and enjoy!
