Zucchini Pie Recipe – This Bisquick Zucchini Bake comes together with about 10 minutes of prep! Serve it as a side dish or as a vegetarian entrée to take advantage of your fresh summer veggies.
INGREDIENTS FOR BISQUICK ZUCCHINI BAKE – SHOPPING LIST
- Zucchini
- Oil
- Eggs
- Bisquick (or other similar all-purpose baking mix)
- Parmesan cheese
- Cheddar cheese
- Onion
- Salt
Zucchini Pie
Ingredients
- 3 cups Zucchini thinly-sliced or grated
- 1 small Sweet Onion diced
- 1 cup Bisquick (or other similar all-purpose baking mix)
- ½ cup Oil preferably a neutral-tasting oil such as canola, vegetable or avocado
- ½ cup Parmesan Cheese grated
- ½ cup mozzarella Cheese grated
- 4 Eggs
Instructions
- Stir together the zucchini, oil, eggs, Bisquick, Parmesan, cheddar, onion and salt.
- Spray baking dish with oil
- Add a layer of bread crumbs.
- Transfer the mixture to a pie dish and use your fingers, if necessary, to evenly spread the zucchini throughout the dish.
- Pre-heat oven to 375F
- Pop it in the oven and bake for 35 minutes [or until golden brown]
- Broil for an extra minute [optional]
- Allow to cool for at least 10 minutes before serving.
