Zucchini Pie

Ingredients
  

  • 3 cups Zucchini thinly-sliced or grated
  • 1 small Sweet Onion diced
  • 1 cup  Bisquick (or other similar all-purpose baking mix)
  • ½ cup  Oil preferably a neutral-tasting oil such as canola, vegetable or avocado
  • ½ cup Parmesan Cheese grated
  • ½ cup  mozzarella Cheese grated
  • 4 Eggs

Instructions
 

  • Stir together the zucchini, oil, eggs, Bisquick, Parmesan, cheddar, onion and salt.
  • Spray baking dish with oil
  • Add a layer of bread crumbs.
  • Transfer the mixture to a pie dish and use your fingers, if necessary, to evenly spread the zucchini throughout the dish.
  • Pre-heat oven to 375F
  • Pop it in the oven and bake for 35 minutes [or until golden brown]
  • Broil for an extra minute [optional]
  • Allow to cool for at least 10 minutes before serving.
