Every week my husband and I sit down to create the meals we plan to eat for the week. We get the necessary ingredients and go from there. The two of us have been working from home, which is great, but we still look for some easy meal ideas because we are normally on a time crunch.
Check out some of these delicious meal ideas no matter your diet!
Vegetarian Options
Eggplant Pizza – This has easily become one of our favorite meals. Although preparation time is a bit long we do really enjoy this meal. Keep an eye out for our recipe of this delicious meal in the Food section of this blog!
Bean Salad – This is another recipe with a long preparation time, but a weekly staple for us as my husband loves bean-based meals. You first need to soak your beans over night, boil them, and chop up your tomatoes and purple onions. A drizzle of pomegranate molasses, a pinch of salt and bon appetite.
Zucchini Pie – Inspired by my husband aunt, we made this recipe and loved it. We don’t eat it as frequently but when we do remember this option we enjoy it very much.
Meat Options
Tacos – Our preference is ground beef tacos. Assembly is key here, you have to choose your favorite toppings. For us its tomatoes, lettuce, cheese, purple onion, and of course guacamole.
Fajitas – We love chicken fajitas! Similar to the above, assembly is key, we basically use the same toppings as listed above. The difference between the beef tacos we make the chicken fajitas is the seasoning packet we use.
Chicken Sausage – Mostly vegetable base but what upgrades this for me is the chicken sausage. Veggies we use are potatoes, zucchini, and mushrooms. Drizzled in olive oil and the best part is the use of za’atar (thyme).
Tuna Salad – Base of this recipe is canned tuna, carrots, and celery. The sauce mix is a small spoon of mayonnaise, dijon mustard, and lemon.
Fish: Tilapia or Salmon – Whether you prefer tilapia like my husband or love Salmon like me, this recipe is easy. All you need to do is oil your baking dish, slice lemons, crush garlic, and to spice it up add red pepper flakes.
Pork Chops – This is the newest addition to our meals. We don’t eat this too frequently but the when we do its a treat. To make this lightly butter your pan, sauté onions and tomatoes then place your pork chops. Add your favorite seasonings and close the pan to let it absorb all the flavors.
Pasta Variations
Pasta is one of the easiest meals we default too. With a few options in the arsenal we are able to lean on some delicious ideas when we don’t know what we want to make.
Spicy Pasta – Inspired by Gigi Hadid’s famous vodka pasta recipe, this is a spicy pasta with a twist. Although it might not be the healthiest option it sure is a treat!
Gnocchi – Another easy default that we just get frozen from Trader Joes. My favorite is the Sweet Potato option, but we also like the cauliflower gnocchi.
Spaghetti w/ sauté – This is our “detox” meal. When we eat out over the weekend we normally default to this option in the beginning of the week. We sauté spinach, mushroom, and onions in a lightly drizzled soy sauce and sesame oil mix and plop that mix over some spaghetti.

I have to admit that I’m one of those people who never, ever, knows what they want to eat. This is such a great idea! I’ll have to start sitting down at the start of each week and have a little brain storming session. Also, thanks for the ideas- I have a place to start!
