This simple chicken sausage with roasted vegetables Recipe is my go-to for any day of the week! If you are looking for something easy to make yet filling and nutritious this is the meal for you. And you can’t help but love that the clean up for it is easy too.
Chicken sausage is such a versatile ingredient especially when tossing in your vegetables of choice and spicing it with the secret ingredient which is dried thyme!
Essentially you can customize this dish to your taste whether it is switching up the vegetables or the spices. The star of the show is the chicken sausage and how roasting the vegetables gives it such a delicious touch.

One Pan Chicken Sausage with Roasted Vegetables Recipe
Ingredients
- 9 ounces chicken sausage,, sliced into 1/2 inch rounds
- 1 yellow onion
- 6 Mushrooms
- 8 Mini Golden potatoes
- 2 Zucchini
- 2 tablespoons Vegetable oil or olive oil
- 1 teaspoon dried thyme
- 1 teaspoon Red pepper flakes
Instructions
- Preheat oven to 400°F
- Wash and chop all your desired vegetables
- Chop your chicken sausage
- Mix the vegetables and chicken sausage into the baking pan
- Add the spices (dried thyme and red pepper flakes)
- Drizzle with vegetable oil (or preferred oil) give it a good mix
- Bake for 25 to 30 minutes, or until vegetables are tender, tossing halfway through baking.
