Low Carb Eggplant Pizza Recipe

Ingredients
  

  • 2 Eggplants
  • Olive Oil
  • Lemon Juice
  • Salt
  • Mushroom
  • Spinach
  • Pizza Sauce
  • Cheese

Instructions
 

  • Wash your eggplants
  • Cut them into circle slices
  • Soak your eggplants in olive oil, lemon juice, and salt for 15 minutes
  • Wash and chop your toppings (mushroom and spinach)
  • Put soaked eggplants into oven for 15 minutes
  • Meanwhile, prepare your sauce
  • Add pizza sauce - spice it up with crushed red peppers, oregano, and garlic powder
  • Add in the mushrooms
  • Put Spinach onto of eggplants
  • Pour your pizza sauce over the eggplants
  • Top with shredded cheese of choice (we prefer mozzarella)
  • Top it off with some Thyme!
  • Pop it back in the oven for an additional 30 minutes
  • Take out and let it cool for 15 minutes
  • Serve and enjoy!
