Wash your eggplants
Cut them into circle slices
Soak your eggplants in olive oil, lemon juice, and salt for 15 minutes
Wash and chop your toppings (mushroom and spinach)
Put soaked eggplants into oven for 15 minutes
Meanwhile, prepare your sauce
Add pizza sauce - spice it up with crushed red peppers, oregano, and garlic powder
Add in the mushrooms
Put Spinach onto of eggplants
Pour your pizza sauce over the eggplants
Top with shredded cheese of choice (we prefer mozzarella)
Top it off with some Thyme!
Pop it back in the oven for an additional 30 minutes
Take out and let it cool for 15 minutes
Serve and enjoy!
