Tahini Bread or Tahinov Hats (Թահինով Հաց) in Armenian is a unique flaky and sweet Armenian treat. Some might know it under other names such as: Tahini Roll, Sesame Paste Bread or Khobz bi–tahini (خبز بطحينه).
The main ingredient of this delicious bite is Tahini (Sesame Seed Paste), and its unique feature is its extreme crunchiness.
I grew up having Tahinov Hats when visiting Lebanon in the summer. It was a treat I couldn’t find elsewhere, but could easily grab one in Bourj Hammoud’s bakeries. Now, after teaming up with The Food Dabbler, we imported the smell of Tahini Bread from the streets of Bourj Hammoud to our kitchen with the below recipe.
Tahini Bread – Tahinov Hats
Ingredients
Dough
- 1 ½ Cups Flour
- ½ Cup Lukewarm Water
- 2 Tbsp Sugar
- 1 Tbsp Instant Yeast
- 1 Tbsp Olive Oil
- ½ Tsp Salt
Filling¼
- Tahini
- Sugar
- Cinnamon (Optional)
Instructions
Prepare The Dough
- Mix All the Dry Ingredients in a Bowl
- Add Water and Oil Gradually to the Bowl
- Mix Well and Knead to Form Cohesive Dough
- Cover and Leave to Rest for 2 hours
Add Filling
- Divide dough into 4 quarters. Roll the pieces as thinly as possible.
- Generously spread Tahini on top to cover the complete surface of the dough.
- Sprinkle Sugar and Cinnamon all over (1 tsp Cinnamon to 2 tbsp Sugar)
- Poke a hole in the center and roll out until one side splits open. Continue rolling to form a rope. Then roll the rope into a Spiral.
- Flatten the spiral by rolling it out with a rolling pin.
- Place on Baking Sheet and spread some Olive Oil on top.
- Preheat Oven to 375F. Bake for 10-15 mins or until golden brown.
- Remove from Oven and Let Cool for 5 minutes. Enjoy!

Tip – enjoy the Tahinov Hats with your morning cup of coffee or as a snack during the day to hold you over before lunch. Some have even doubled this for a dessert by putting a scoop of vanilla ice cream on top! Such a diverse and delicious Armenian treat.
